Guilt Free Tacos!

This recipe is delicious and doesn’t break the bank as far as calories go! I am trying desperately to eat healthier and exercise before our wedding cruise in September. I have experimented with a lot of low-cal recipes and ideas that have been less then savory. This is one of the few I’ve come across that I actually really like. I thought the turkey might end up dry and/or rubbery but I was pleasantly surprised to find the meat had a normal taco consistency and was not dry at all.

IngredYou are going to need what you would usually use for tacos, nothing out of the ordinary here other than the turkey!

If I have one complaint it would be the sauce was a little thin, I think next time I will experiment with a few tricks to thicken it up a bit 🙂

Turkey Taco Lettuce Wraps
Adapted from Skinnytaste

Ingredients:

  • 1.3 lbs 99% lean ground turkey
  • 1 tsp garlic salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 tsp cayenne pepper
  • 1 small onion, minced
  • 1 small bell pepper, minced
  • 1/2 cup salsa
  • 3/4 cup water
  • 8 oz can tomato sauce
  • Olive oil
  • 8 large Romaine leaves
  • Toppings: cheese, olives, tomato, onions, salsa (whatever you like!)

Directions:
Saute onions and peppers in skillet with a little olive oil, when they are almost done set aside.
Brown turkey in a large skillet.
When no longer pink add dry seasoning and mix well.
Add onion, pepper, salsa, water and tomato sauce and cover. Simmer on low for about 20 minutes.
Wash and dry the lettuce. Place meat in the center of leaf and top with whatever you like.
