Memorial Day Dessert

 

Have you ever seen or smelled something that brings you back to an exact moment in your life? Blueberries are a food that take me back to a very vivid memory I have. We were living in Long Island at the time and I was playing in my Grandmother’s garden. She asked I find few berries to add to the fruit salad so I went out in search for the perfect berries, I remember eating them right off the bush and to this day I remember those as being the best blueberries I had ever tasted.

This cake is smooth, creamy and delicious. The perfect addition to your Memorial Day BBQ or just about any day because it is super easy!

There will be two layers to your cake. The bottom layer is basically a dough we will make out of cake mix, butter, and egg. The top layer will remind you of cheesecake, YUM!

After mixing well your bottom layer should look a lot like cookie dough.

As usual I forgot to take a picture before I rushed the cake into the oven so I had to snap one quick while it was in.

The finished product is a yummy cheesecake-like berry cake with a buttery crust! I don’t like hot or cooked strawberries so I usually slice a few on top as garnish.

Berry Butter Cake from Sweet-Spatula!

Ingredients:

  • 1 box White Cake Mix
  • 3 large eggs
  • 2 sticks of melted butter
  • 8 oz cream cheese
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 cup of blueberries
  • 1/2 cup raspberries
  • 1/4 cup sliced strawberries (for garnish, optional)

Directions:
Preheat oven to 350°. Grease a 9 x 13 inch pan.
Combine the cake mix, 1 egg and 1 stick of melted butter. Mix well with an electric beater. Pat the mixture into the bottom of your pan.
Beat cream cheese until smooth. Add remaining eggs, vanilla, and melted butter – beat again until blended. Carefully fold in berries and sugar then spread the filling over the cake batter.

Bake for 40 to 50 minutes. The center should be a little gooey. Serve at room temperature. Makes 6-8 servings
